Sodium Nitrite Effects

Sodium nitrate is used as a preservative in processed meats. It is used to delay spoilage and preserve color. It is toxic to humans and animals. Make sure to give your pet at least 50mg of Vitamin C with EVERY meal.

Foods that usually contain sodium nitrate include ham, corned beef, cured or processed meat like salami, lettuce, spinach, fruit, beets, radishes, celery, cabbage, broccoli, cauliflower, parsley, turnips, beans, peas, corn, artichoke, collard greens, carrots, potatoes, wheat, rice, peanuts any kind of smoked meat included smoked salmon, dried fish, pate spreads, pickled pigs feet and beer. Any food that grows in the ground is going to have nitrates because almost all fertilizer contains sodium nitrate. White meat such as tuna and chicken do not usually contain sodium nitrate.

Fruits are good to eat because even though they may have been fertilized the vitamin c in the fruit counteracts the nitrates absorbed during growth.

Sodium nitrate turns into nitrite which then turns into nitrosamines.

Because of the high level of toxicity, sodium nitrite is now being used to control the feral pigs and boar population. The animal first feels faint then passes out and then dies.

Sodium nitrate and nitrate have been linked to numerous modern day illnesses, including oxygen deprivation, heart disease, diabetes and cancer.

According to Mayo Clinic's Martha George, M.D., sodium nitrate causes inflammation in arteries making them more likely to narrow and harden. Nitrates also damage blood vessels. Dr. George also points out that nitrates appear to influence the way the body metabolizes sugar, predisposing you to diabetes. In light of these dangers, along with the relatively high levels of fat and sodium, Dr. George recommends you steer clear of processed meats. Instead chose fresh, lean meat. Dr. George recommends limiting your lean meat intake to 8oz a day.

In 2005 the University of Hawaii conducted a study that included 200,000 men and women. Over a period of 7 years the study examined the relationship between processed meat consumption and pancreatic cancer. The study concluded that those who consumed processed meats with sodium nitrates were 67% more likely to get pancreatic cancer than those who ate little to no meat products.

Nitrates are converted by the body into nitrosamines, which are toxic to humans and animals. They promote the growth of cancer cells. This is done through oxygen deprivation. They also damage the function of the pancreas making it more likely for a person to become diabetic

Nitrate Free Foods:

Do nitrate free foods really not have any nitrates? No, that is a false statement. Hot dogs, bacon, cured meat and other so called "uncured" products are full of nitrates. The way the food industry gets around this is they make claims such as "no nitrates added."

The reality is, companies that make nitrate free meat products have to use something to substitute for the sodium nitrate. Celery juice is a popular choice because celery juice is high in sodium nitrates.

As I stated earlier celery is a natural source of sodium nitrate. Buy adding celery juice to their meat products, companies are allowed to claim "no added nitrates." Because all the nitrates are in the added celery juice. Because celery is high in nitrates, you could actually be consuming ten times as much sodium nitrate as conventional products.

Is there a way to stop nitrates from tuning into nitrosamines? No.

So What Can I Do? It is almost impossible to avoid nitrates.
The best defense is to take Vitamin C at every meal.


Vitamin C
 inhibits the formation of nitrosamines in the body. If you do happen to eat a small amount of nitrates take at least 1,000mg of Vitamin C (I recommend Ester C) to stop the sodium nitrate from converting into nitrosamines. This is a simple yet effective solution.

Migraines: Nitrates are also linked to migraine headaches. Nitrates interfere with the bodies ability to transport oxygen. The small capillaries in your head are the first to react to this lack of oxygen.

Methemoglobinemia: Is the technical term for when sodium nitrate stops red blood cells from transporting oxygen throughout the body. This condition can cause sever respiratory problems and can be fatal. Anyone with asthma should NEVER ingest sodium nitrates. Symptoms include lack of oxygen, irregular heartbeat, dizziness, lethargy, convulsions and coma.

Unbelievably, some asthma sprays actually contain sodium nitrate because it dilates blood vessels. How crazy is that ????


High intakes of sodium nitrate can cause developmental and reproductive toxicity issues including anemia, pre-eclampsia, gestational (pregnancy) diabetes, miscarriage, childhood cancers, childhood deformities and autism. If you are pregnant DO NOT eat any sodium nitrates.

If you have a well, your water may be VERY high in nitrates as most fertilizers contain them. Do NOT drink or cook with any well or tap water unless it is first purified with a reputable water filtration system.
